Tomato Chicken Pasta

Here’s a simple and delicious recipe for Tomato Chicken Pasta:

Tomato Chicken Pasta

Ingredients

  • 1 lb (450g) pasta of choice (penne, spaghetti, or fusilli work well)
  • 2 tablespoons olive oil
  • 1 lb (450g) chicken breast, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1/4 cup tomato paste
  • 1/2 cup heavy cream (optional, for a creamier sauce)
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Cook the Pasta: In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken: While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook until golden and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté the Garlic: In the same skillet, add a bit more olive oil if needed. Add the minced garlic and red pepper flakes (if using) and cook for 1-2 minutes until fragrant.
  4. Make the Tomato Sauce: Add the diced tomatoes and tomato paste, stirring well to combine. Simmer for 8-10 minutes until the sauce thickens. For a creamy sauce, add the heavy cream and stir until smooth.
  5. Combine: Return the cooked chicken to the skillet and stir into the sauce. Add the drained pasta, tossing everything together until the pasta is evenly coated with sauce.
  6. Serve: Top with grated Parmesan cheese and fresh basil or parsley. Serve warm.
