Tomato Basil Pasta Recipe

Ingredients:

  • 12 oz pasta (spaghetti, penne, or your choice)
  • 4 tablespoons olive oil
  • 4 garlic cloves, minced
  • 4 cups cherry tomatoes (or Roma tomatoes, diced)
  • 1 cup fresh basil leaves, chopped
  • ½ teaspoon red pepper flakes (optional for a little heat)
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Cook the pasta in salted water according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the cherry tomatoes to the skillet. Cook for 6-8 minutes, stirring occasionally, until the tomatoes burst and release their juices. Use the back of a spoon to gently crush some of the tomatoes for a saucier consistency.
  4. Stir in the red pepper flakes, salt, and pepper. Cook for another 2 minutes, allowing the flavors to meld.
  5. Add the cooked pasta to the skillet and toss to combine with the tomato sauce.
  6. Remove from heat and stir in the fresh chopped basil and Parmesan cheese.
  7. Garnish with extra fresh basil leaves and serve immediately.

Tips:

  • For extra flavor, you can add a splash of balsamic vinegar or a drizzle of balsamic glaze at the end.
  • Add grilled chicken or shrimp for more protein.

Enjoy your bright and flavorful tomato basil pasta!
