  • Salt and pepper, to taste
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (4 oz) can diced green chiles
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional, for a bit of heat)
  • 4 cups chicken broth
  • 2 (15 oz) cans Great Northern beans or cannellini beans, drained and rinsed
  • 1 cup frozen or canned corn (optional)
  • 1/2 cup sour cream
  • 1/2 cup heavy cream (or half-and-half)

Optional Toppings

  • Shredded cheese
  • Chopped fresh cilantro
  • Sliced jalapeños
  • Diced avocado
  • Tortilla chips

Instructions

  1. Cook the Chicken:
  • In a large pot or Dutch oven, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the pot.
  • Cook for 5-6 minutes per side until the chicken is browned and cooked through. Remove the chicken from the pot and shred it with two forks.
  1. Cook the Vegetables:
  • In the same pot, add the diced onion and cook for about 3-4 minutes until softened.
  • Add the minced garlic, diced green chiles, cumin, chili powder, paprika, and cayenne pepper (if using). Cook for another 1-2 minutes until fragrant.
  1. Simmer the Chili:
  • Pour in the chicken broth and add the beans and corn, if using.
  • Return the shredded chicken to the pot and bring the mixture to a simmer. Let it cook for 15-20 minutes to allow the flavors to meld.
  1. Add the Creamy Elements:
  • Stir in the sour cream and heavy cream, mixing until the chili is creamy and smooth. Simmer for another 5 minutes until heated through. Adjust the seasoning with salt and pepper as needed.
  1. Serve:
  • Ladle the chili into bowls and top with shredded cheese, fresh cilantro, jalapeños, avocado, and tortilla chips as desired.

This White Chicken Chili is rich, cozy, and full of flavor. Perfect for a comforting dinner!
