Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers (any color)

  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 cup black beans (drained and rinsed)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro (for garnish, optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Prepare the peppers:
    • Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil.
    • Place them upright in a baking dish.
  3. Cook the filling:
    • In a large skillet, heat a little olive oil over medium heat. Add the chopped onion and garlic, cooking until softened (about 3-4 minutes).
