Instructions:

  1. Marinate the steak:
    • In a bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, paprika, onion powder, oregano, salt, and pepper.
    • Place the steak in a large ziplock bag or shallow dish and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes, preferably 1-2 hours, to let the flavors soak in.
  2. Cook the steak:
    • Heat a large skillet or grill pan over medium-high heat. Remove the steak from the marinade and cook for 4-5 minutes per side, depending on your preferred doneness. For medium-rare, aim for an internal temperature of 135°F (57°C).
    • Once cooked, remove the steak from the skillet and let it rest for 5-10 minutes before slicing it thinly against the grain.
  3. Cook the veggies:
    • In the same skillet, add 1 tablespoon of olive oil. Sauté the sliced bell peppers and onions for about 5-7 minutes until they’re soft and slightly charred.
  4. Warm the tortillas:
    • While the veggies are cooking, warm your tortillas in a dry skillet for about 20-30 seconds on each side or wrap them in foil and heat them in the oven.
  5. Assemble the fajitas:
    • Serve the sliced steak with the sautéed peppers and onions, along with tortillas and your favorite toppings like sour cream, guacamole, salsa, shredded cheese, and fresh cilantro.
