Instructions
- Prepare the Vegetables: In a large pot, heat olive oil or butter over medium heat. Add the onion, carrots, and celery, and cook until softened, about 5-7 minutes. Add the garlic and cook for 1 minute more.
- Add Peas and Broth: Stir in the split peas, ham hock (or diced ham), broth, bay leaf, and thyme if using. Season with salt and pepper.

- Remove Ham Hock: If using a ham hock, remove it from the pot. Shred any meat from the bone and add it back to the soup, discarding the bone.
