Ingredients

  • 1 lb dried split peas, rinsed
  • 1 tbsp olive oil or butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 smoked ham hock or 1 cup diced ham
  • 6 cups chicken or vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Vegetables: In a large pot, heat olive oil or butter over medium heat. Add the onion, carrots, and celery, and cook until softened, about 5-7 minutes. Add the garlic and cook for 1 minute more.
  2. Add Peas and Broth: Stir in the split peas, ham hock (or diced ham), broth, bay leaf, and thyme if using. Season with salt and pepper.
  3. Simmer: Bring the soup to a boil, then reduce heat to low. Cover and simmer for 1-1.5 hours, stirring occasionally, until the peas are soft and the soup has thickened. If it gets too thick, add a bit more broth or water.
  4. Remove Ham Hock: If using a ham hock, remove it from the pot. Shred any meat from the bone and add it back to the soup, discarding the bone.
  5. Adjust Seasoning: Taste and adjust the seasoning as needed with more salt and pepper.
  6. Serve: Serve hot, garnished with fresh parsley if desired. Split pea soup pairs wonderfully with crusty bread.
