Ingredients:

For the Noodles:

  • 8 oz noodles of your choice (ramen, soba, rice noodles, or any preferred type)
  • Water (for boiling the noodles)
  • 1 tbsp vegetable oil (for stir-frying)

For the Spicy Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste) or sriracha (adjust to your heat preference)
  • 1 tbsp sesame oil
  • 1 tbsp chili oil (optional, for extra heat)
  • 1 tbsp rice vinegar (or lime juice)
  • 1 tbsp honey (or sugar, for sweetness)
  • 2 cloves garlic, minced
  • 1 tsp grated ginger (optional)
  • 1-2 tsp red pepper flakes (adjust to spice level)
  • 1 tbsp water (to loosen the sauce, if needed)

For Stir-Fry:

  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup cabbage or spinach (optional)
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Optional Add-ins:

  • 1 cup cooked protein (chicken, shrimp, tofu, or beef)
  • 1 egg, fried or poached (for topping)

Instructions:

1. Cook the Noodles:

  • Cook the noodles according to the package instructions. Drain and set aside.

2. Prepare the Spicy Sauce:

  • In a small bowl, mix together soy sauce, gochujang (or sriracha), sesame oil, chili oil (if using), rice vinegar, honey, minced garlic, ginger, and red pepper flakes. Adjust the spice level by adding more or less chili paste or red pepper flakes.

3. Stir-Fry the Vegetables:

  • Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  • Add the sliced onion, bell pepper, and carrot. Stir-fry for 3-4 minutes until the vegetables start to soften.
  • If using cabbage or spinach, add it and stir-fry for another 1-2 minutes until wilted.

4. Combine the Noodles and Sauce:

  • Add the cooked noodles to the pan with the vegetables.
  • Pour the spicy sauce over the noodles and toss everything together until the noodles are well coated and heated through, about 2-3 minutes.

5. Optional Protein and Egg:

  • If using a cooked protein (chicken, shrimp, tofu, or beef), add it to the noodles and toss everything together.
  • For an extra treat, top the noodles with a fried or poached egg.

6. Serve and Garnish:

  • Transfer the spicy noodles to serving bowls.
  • Garnish with chopped green onions and sesame seeds.

Enjoy with:

  • A side of cucumber salad or kimchi for a refreshing contrast
  • Extra chili oil or lime wedges for more heat and tang
