Slow Cooker Honey Garlic Chicken and Veggies

This flavorful dish features tender chicken and perfectly cooked vegetables coated in a sweet and savory honey garlic sauce, all made easily in the slow cooker. It’s a great one-pot meal!

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 lb baby potatoes, halved
  • 4 large carrots, cut into chunks
  • 1 lb green beans, trimmed
  • 4 cloves garlic, minced
  • 1/3 cup honey
  • 1/3 cup soy sauce
  • 1/4 cup ketchup
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • Fresh parsley for garnish

Instructions:

  1. Prepare the slow cooker:
    Place the chicken breasts (or thighs) in the center of the slow cooker. Add the baby potatoes and carrots around the chicken.
  2. Make the sauce:
    In a small bowl, whisk together the honey, soy sauce, ketchup, olive oil, garlic, thyme, basil, salt, and pepper. Pour the sauce evenly over the chicken and vegetables.
  3. Cook:
    Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
  4. Add green beans:
    During the last 30 minutes of cooking, add the green beans to the slow cooker. Stir them into the sauce and allow them to cook until they are tender but still slightly crisp.
  5. Serve:
    Garnish the dish with fresh parsley and serve the chicken and veggies with some of the honey garlic sauce drizzled on top.
