These smothered pork chops with mushroom gravy are a delightful way to serve pork chops in a skillet dish your family will love! Pork chops are browned, and a pan sauce is made in the same skillet. Return the chops to the skillet for a short time as the sauce develops. We like this with mashed potatoes and a crusty bread, to catch every smidge of that tasty sauce! A green salad or vegetable rounds out the meal.
Ingredients:
- 4 bone-in pork chops
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced (cremini or button mushrooms work well)
- 2 tablespoons all-purpose flour
- 1 cup chicken or vegetable broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Chopped fresh parsley for garnish (optional)
Instructions:
- Season the pork chops generously with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops to the skillet and sear them for about 3-4 minutes on each side, or until they are golden brown and cooked through. Remove the pork chops from the skillet and set them aside on a plate.
- In the same skillet, add the butter. Once melted, add the chopped onion and sauté for 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms to the skillet and cook for another 5-6 minutes, or until the mushrooms are browned and tender.
- Sprinkle the flour over the mushrooms and stir to combine. Cook for 1-2 minutes to cook off the raw flavor of the flour.
- Slowly pour in the chicken or vegetable broth while stirring constantly to prevent lumps from forming. Allow the mixture to come to a simmer, then reduce the heat to medium-low.
- Stir in the heavy cream, dried thyme, and dried rosemary. Let the gravy simmer for a few minutes until it thickens slightly.
- Return the pork chops to the skillet, nestling them into the mushroom gravy. Spoon some of the gravy over the pork chops.
- Cover the skillet with a lid and let the pork chops simmer in the gravy for another 5-10 minutes, or until they are heated through and the flavors have melded together.
- Serve the skillet pork chops with mushroom gravy hot, garnished with chopped fresh parsley if desired. Enjoy!
