Shrimp Scampi Recipe

Ingredients:

Instructions:

  1. Cook the pasta: In a large pot of salted boiling water, cook the linguine or pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  2. Sauté the shrimp: In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook for about 2 minutes on each side until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.
  3. Make the scampi sauce: In the same skillet, add the remaining olive oil and butter. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant (be careful not to burn the garlic).
  4. Deglaze the pan: Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes to reduce slightly.
  5. Combine everything: Return the cooked shrimp to the skillet and toss to coat in the sauce. Add the chopped parsley and stir in the reserved pasta water if the sauce needs more liquid. Simmer for another minute to combine all the flavors.
  6. Serve: Toss the cooked pasta in the sauce until fully coated. Garnish with extra parsley, and serve with grated Parmesan cheese, if desired.
