  1. Prepare the noodles:
    • Cook the lo mein noodles according to the package instructions. Drain and set aside.
  2. Cook the shrimp:
    • Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
    • Season the shrimp with a little salt and pepper, then add them to the pan.
    • Cook the shrimp for about 2-3 minutes on each side until they turn pink and are cooked through. Remove from the pan and set aside.
  3. Stir-fry the vegetables:
    • In the same pan, add the remaining oil. Stir in the onions, bell pepper, broccoli, and carrot. Cook for 3-4 minutes until the vegetables begin to soften.
    • Add garlic and ginger, and stir-fry for another 1-2 minutes until fragrant.
  4. Make the sauce:
    • In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, sesame oil, and sugar (if using).
  5. Combine everything:
    • Add the cooked noodles and shrimp back into the pan with the vegetables.
    • Pour the sauce over the top, and toss everything together, making sure the noodles, shrimp, and veggies are well coated.
  6. Garnish and serve:
    • Remove from heat, and garnish with chopped green onions and sesame seeds if desired.
    • Serve immediately and enjoy!
