- 1.5 lbs pork shoulder, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 medium carrots, peeled and chopped
- 3 medium potatoes, peeled and cubed
- 2 celery stalks, chopped
- 1 cup diced tomatoes (canned or fresh)
- 4 cups chicken or vegetable broth
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.
- Season the pork cubes with salt and pepper, then add them to the pot. Brown the pork on all sides (about 5-6 minutes). Remove the pork and set aside.
- In the same pot, add the remaining tablespoon of olive oil and sauté the onions, carrots, celery, and garlic until the onions are softened (about 3-4 minutes).
- Stir in the tomato paste, paprika, and thyme and cook for another minute.
- Return the pork to the pot along with the diced tomatoes, potatoes, Worcestershire sauce, bay leaves, and broth.
- Bring to a boil, then reduce the heat to low, cover, and let the stew simmer for 1.5 to 2 hours, until the pork is tender and the vegetables are cooked through.
- Taste and adjust seasoning with salt and pepper, if needed.
- Remove the bay leaves before serving. Garnish with fresh parsley if desired.
Tips:
- You can add more vegetables, like peas or green beans, toward the end of cooking for extra color and texture.
- This stew pairs well with crusty bread or over mashed potatoes.
