Peanut Butter Chicken
Ingredients
- 1 lb chicken breast or thighs, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 tbsp vegetable oil
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1/2 cup peanut butter (creamy or crunchy)
- 1 cup coconut milk or chicken broth
- 2 tbsp soy sauce
- 1 tbsp honey or brown sugar
- 1 tbsp lime juice
- 1/2 tsp chili flakes or 1 tbsp sriracha (optional, for heat)
- 1/4 cup chopped peanuts and fresh cilantro for garnish
Instructions
- Season and Cook Chicken: Season the chicken pieces with salt and pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from the pan and set aside.
- Sauté Vegetables: In the same pan, add the onion, bell pepper, and garlic. Sauté for 3-4 minutes, until softened.
- Make the Peanut Sauce: Reduce heat to medium. Add the peanut butter, coconut milk (or broth), soy sauce, honey, lime juice, and chili flakes (if using). Stir until the sauce is smooth and begins to thicken.
- Combine and Simmer: Add the chicken back into the skillet, stirring to coat in the peanut sauce. Let it simmer for 5-10 minutes, until the chicken is cooked through and the sauce has thickened.
- Garnish and Serve: Top with chopped peanuts and fresh cilantro. Serve over rice or noodles for a complete meal.
