Ingredients:

  • 6-8 ripe peaches (or 2 large cans of peaches, drained)

  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch (for thickening)
  • Optional: 1/4 cup water (if using fresh peaches)
For the Topping:
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup whole milk
  • 1/2 tsp vanilla extract
  • 1 tbsp sugar mixed with 1/4 tsp cinnamon (for sprinkling)

Instructions:

1. Prepare the Peaches:
  • Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  • If using fresh peaches, peel and slice them. If using canned peaches, drain them thoroughly.
  • In a large bowl, combine the peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, vanilla, and cornstarch. Toss until well-coated. (If using fresh peaches, add the 1/4 cup water to the mixture).
  • Pour the peach mixture into the prepared baking dish.
2. Make the Topping:
  • In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add the cold butter cubes and cut them into the flour mixture using a pastry cutter or your fingers until it forms a crumbly texture.
  • Stir in the milk and vanilla extract until a thick batter forms.
3. Assemble and Bake:
  • Drop spoonfuls of the topping batter over the peaches. Don’t worry about covering all the peaches; the topping will spread as it bakes.
  • Sprinkle the cinnamon-sugar mixture over the top for an extra crunch.
  • Bake for 40-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
4. Serve:
  • Let the cobbler cool for 10-15 minutes before serving.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Tips:

  • If you prefer a more cakey topping, you can double the topping recipe.
