Mayak Eggs (Korean Marinated Eggs)

Here’s a recipe for Mayak Eggs, or Korean Marinated Eggs. These eggs are sweet, salty, and packed with umami, making them the perfect side dish or topping for rice, noodles, or even a snack!

Ingredients:

For the Eggs:

  • 6 large eggs
  • Water (for boiling)
  • Ice water (for cooling)

For the Marinade:

  • ⅓ cup soy sauce
  • ⅓ cup water
  • 2 tbsp sugar (or honey)
  • 1 tbsp sesame oil
  • 3 cloves garlic, finely chopped
  • 2-3 green onions, chopped
  • 1 small chili pepper (optional, for heat), finely sliced
  • 1 tbsp toasted sesame seeds
  • 1 tbsp rice vinegar (optional, for tang)

Instructions:

1. Boil the Eggs:

  • Bring a pot of water to a boil and carefully lower the eggs into the water using a spoon.
  • Boil for 6-7 minutes for soft-boiled eggs or 8-9 minutes for medium-boiled eggs.
  • Once done, immediately transfer the eggs into a bowl of ice water to stop the cooking process. Let the eggs cool for 5-10 minutes.
  • Peel the eggs carefully and set aside.

2. Prepare the Marinade:

  • In a bowl, mix together soy sauce, water, sugar (or honey), sesame oil, chopped garlic, green onions, chili pepper (if using), sesame seeds, and rice vinegar.
  • Stir until the sugar dissolves.

3. Marinate the Eggs:

  • Place the peeled eggs in a container with a lid (glass or plastic). Pour the marinade over the eggs, ensuring they’re fully submerged.
  • Cover and refrigerate for at least 4-6 hours, but for the best flavor, marinate overnight.

4. Serve:

  • Once marinated, slice the eggs in half and serve over a bowl of steamed rice, noodles, or on their own as a snack.
  • Drizzle some of the marinade over the eggs and garnish with additional sesame seeds and chopped green onions if desired.

Enjoy with:

  • A side of kimchi or other pickled vegetables
  • A sprinkle of red pepper flakes or chili oil for extra spice

These Mayak Eggs are addictively delicious with a perfect balance of sweet, salty, and savory flavors!
