Lemon Herb Grilled Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- ¼ cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- ¼ cup olive oil
- 3 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh oregano leaves (or 1 teaspoon dried)
- Salt and pepper to taste
Instructions:
- Prepare the Marinade:
- In a bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, fresh herbs, salt, and pepper.
- Marinate the Chicken:
- Place the chicken breasts in a large ziplock bag or shallow dish.
- Pour the marinade over the chicken, ensuring that each breast is fully coated.
- Seal the bag or cover the dish, and refrigerate for at least 1–2 hours (or overnight for more flavor).
- Grill the Chicken:
- Preheat your grill to medium heat.
- Remove the chicken from the marinade and shake off any excess liquid.
- Grill the chicken for about 6–8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred on the outside.
- Serve:
- Let the chicken rest for a few minutes after grilling to lock in the juices.
- Garnish with extra fresh herbs and lemon slices, and serve with a fresh summer salad or grilled vegetables.
