Lemon Herb Grilled Chicken

Lemon Herb Grilled Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • ¼ cup olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh oregano leaves (or 1 teaspoon dried)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Marinade:
  • In a bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, fresh herbs, salt, and pepper.
  1. Marinate the Chicken:
  • Place the chicken breasts in a large ziplock bag or shallow dish.
  • Pour the marinade over the chicken, ensuring that each breast is fully coated.
  • Seal the bag or cover the dish, and refrigerate for at least 1–2 hours (or overnight for more flavor).
  1. Grill the Chicken:
  • Preheat your grill to medium heat.
  • Remove the chicken from the marinade and shake off any excess liquid.
  • Grill the chicken for about 6–8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred on the outside.
  1. Serve:
  • Let the chicken rest for a few minutes after grilling to lock in the juices.
  • Garnish with extra fresh herbs and lemon slices, and serve with a fresh summer salad or grilled vegetables.

This lemon herb grilled chicken is zesty, aromatic, and a great protein option for any summer meal!
