Ingredients

For the chicken:

  • 2 boneless, skinless chicken breasts

  • 12 oz (340 g) spaghetti or your preferred pasta
  • 3 tbsp unsalted butter

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup pasta water (reserved)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta:
    • Cook pasta in a large pot of salted boiling water according to package directions. Reserve ½ cup of pasta water before draining. Set aside.
  2. Prepare the chicken:
    • Season both sides of the chicken breasts with garlic powder, onion powder, Italian seasoning, salt, and pepper.
    • Heat olive oil in a large skillet over medium heat.
    • Add the chicken and cook for 5-6 minutes per side until golden brown and cooked through (165°F/74°C internal temperature). Remove from the pan and let it rest for a few minutes before slicing.

    • In the same skillet, melt butter over medium heat.
    • Add minced garlic and cook for 1 minute until fragrant.
    • Stir in the lemon zest, lemon juice, and heavy cream. Mix well.
    • Gradually add Parmesan cheese, stirring until melted and the sauce thickens.
    • If needed, add the reserved pasta water a little at a time to reach your desired sauce consistency.
  4. Combine:
    • Add the drained pasta to the skillet with the sauce. Toss to coat.
    • Slice the chicken and place it on top of the pasta.
  5. Garnish and serve:
    • Sprinkle with fresh parsley and additional Parmesan cheese, if desired.
