  1. Prepare the chicken wings:
    • Rinse and pat the chicken wings dry with paper towels. This helps them become extra crispy.
    • Season the wings with salt and pepper.
    • Coat the wings evenly with potato starch or cornstarch. Shake off any excess starch.
  2. Fry the wings:
    • Heat oil in a deep frying pan or a deep fryer to about 350°F (175°C).
    • Fry the wings in batches for about 8-10 minutes, or until golden brown and crispy.
    • Remove the wings and drain them on a wire rack or paper towels.
    • For extra crispiness, double fry the wings by frying them a second time for 2-3 minutes after they’ve cooled slightly.
  3. Make the sauce:
    • In a small saucepan, combine gochujang, soy sauce, honey, rice vinegar, brown sugar, sesame oil, garlic, and ginger.
    • Heat the sauce over medium heat, stirring continuously until it thickens slightly (about 2-3 minutes). If the sauce is too thick, add a tablespoon of water to thin it out.
  4. Coat the wings:
    • Toss the fried wings in the sauce until they’re evenly coated. You can use a large bowl to do this easily.
  5. Garnish and serve:
    • Garnish the wings with sesame seeds and chopped green onions.
