Ingredients:

  • 12 oz (340g) pasta (penne, rigatoni, or your choice)
  • 1 lb (450g) Italian sausage (mild, hot, or a mix)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (or 1 1/2 cups crushed tomatoes)
  • 1/2 cup tomato sauce
  • 1/2 cup heavy cream (optional for a creamy version)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and black pepper, to taste
  • Fresh basil or parsley, chopped for garnish
  • 1/2 cup Parmesan cheese, grated (optional)

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil, then cook the pasta according to package instructions. Drain and set aside.
  2. Cook the sausage: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it into small pieces with a spatula, and cook until browned and fully cooked (about 6-8 minutes). Remove the sausage from the skillet and set it aside.
  3. Sauté the aromatics: In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and cook for an additional minute until fragrant.
