This Honey Mustard Chicken recipe is easy, flavorful, and has a deliciously tangy sauce with a touch of sweetness. Perfect for a quick weeknight meal!

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup Dijon mustard
  • 1/4 cup honey
  • 1 tbsp whole-grain mustard (optional, for added texture)
  • 1/2 cup chicken broth
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh thyme or rosemary, chopped (or 1/2 tsp dried)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Prepare the Chicken:
  • Season both sides of the chicken breasts with salt and pepper.
  1. Sear the Chicken:
  • In a large skillet, heat olive oil over medium-high heat.
  • Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  1. Make the Sauce:
  • In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
  • Stir in the Dijon mustard, honey, whole-grain mustard (if using), chicken broth, lemon juice, and thyme or rosemary.
  • Let the sauce simmer for 3-4 minutes, stirring occasionally, until it thickens slightly.
  1. Combine Chicken and Sauce:
  • Return the chicken to the skillet, spooning the sauce over it. Let it cook for an additional 2-3 minutes to absorb the flavors.
  1. Serve:
  • Garnish with fresh parsley if desired, and serve warm with rice, mashed potatoes, or steamed vegetables.

Enjoy this tangy, savory, and slightly sweet Honey Mustard Chicken! Perfect for a satisfying, easy meal.
