Ingredients:

  • 1 zucchini, cut into 1-inch slices
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 1 pint cherry tomatoes
  • 8 oz mushrooms (optional)
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 garlic cloves, minced
  • Fresh herbs (like rosemary, thyme, or basil), chopped
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions:

  1. Prepare the Vegetables:
  • Cut the zucchini, bell peppers, and onion into bite-sized pieces. Keep the cherry tomatoes and mushrooms whole.
  1. Marinate the Vegetables:
  • In a large bowl, whisk together olive oil, balsamic vinegar, garlic, fresh herbs, salt, and pepper.
  • Add the vegetables to the bowl and toss to coat them evenly with the marinade.
  • Let the vegetables marinate for 15–30 minutes for enhanced flavor.
  1. Assemble the Skewers:
  • If using wooden skewers, soak them in water for 10–15 minutes to prevent burning.
  • Thread the marinated vegetables onto the skewers, alternating colors and types of vegetables.
  1. Grill the Skewers:
  • Preheat your grill to medium heat.
  • Grill the vegetable skewers for about 8–10 minutes, turning them occasionally to ensure all sides are evenly charred and cooked.
  1. Serve:
  • Once the vegetables are tender and slightly charred, remove the skewers from the grill.
  • Serve hot with a side of tzatziki, hummus, or a drizzle of extra balsamic glaze for added flavor.
