Grilled Vegetable Skewers
Ingredients:
- 1 zucchini, cut into 1-inch slices
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into wedges
- 1 pint cherry tomatoes
- 8 oz mushrooms (optional)
- ¼ cup olive oil
- 2 tablespoons balsamic vinegar
- 2 garlic cloves, minced
- Fresh herbs (like rosemary, thyme, or basil), chopped
- Salt and pepper to taste
- Wooden or metal skewers
Instructions:
- Prepare the Vegetables:
- Cut the zucchini, bell peppers, and onion into bite-sized pieces. Keep the cherry tomatoes and mushrooms whole.
- Marinate the Vegetables:
- In a large bowl, whisk together olive oil, balsamic vinegar, garlic, fresh herbs, salt, and pepper.
- Add the vegetables to the bowl and toss to coat them evenly with the marinade.
- Let the vegetables marinate for 15–30 minutes for enhanced flavor.
- Assemble the Skewers:
- If using wooden skewers, soak them in water for 10–15 minutes to prevent burning.
- Thread the marinated vegetables onto the skewers, alternating colors and types of vegetables.
- Grill the Skewers:
- Preheat your grill to medium heat.
- Grill the vegetable skewers for about 8–10 minutes, turning them occasionally to ensure all sides are evenly charred and cooked.
- Serve:
- Once the vegetables are tender and slightly charred, remove the skewers from the grill.
- Serve hot with a side of tzatziki, hummus, or a drizzle of extra balsamic glaze for added flavor.
