Here’s a simple and flavorful Gochujang Fried Rice recipe, perfect for a quick and spicy meal!

Ingredients:

  • 2 cups cooked day-old rice (cold and slightly dry)
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil (for frying)
  • 1 small onion, finely chopped
  • 1 carrot, finely diced
  • 1 cup kimchi, chopped (optional, for extra flavor)
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 1 green onion, chopped (for garnish)
  • 1 egg (optional, for topping)
  • Sesame seeds (for garnish)
  • Salt and pepper to taste

Optional Add-ins:

  • ½ cup frozen peas or corn
  • ½ cup cooked chicken, beef, pork, or shrimp (for added protein)

Instructions:

1. Prepare the Rice:

  • Make sure to use cold, day-old rice for the best texture. If you don’t have leftover rice, spread freshly cooked rice on a tray to cool and dry it a little before frying.

2. Cook the Vegetables:

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chopped onions, carrots, and any other veggies (like peas or corn) you’d like to use.
  • Stir-fry for 3-4 minutes until softened.

3. Add the Garlic, Ginger, and Kimchi:

  • Add minced garlic, grated ginger, and chopped kimchi to the pan.
  • Stir-fry for another 1-2 minutes until fragrant.

4. Add the Rice:

  • Push the vegetables to the side and add another tablespoon of oil.
  • Add the cold rice to the skillet and break up any clumps. Stir-fry until the rice is heated through and slightly crispy in spots, about 4-5 minutes.

5. Season with Gochujang and Soy Sauce:

  • In a small bowl, mix gochujang, soy sauce, and sesame oil together. Adjust the amount of gochujang based on your spice preference.
  • Pour the sauce over the rice and vegetables, stirring well to coat everything evenly. Stir-fry for another 2-3 minutes.

6. Optional Egg:

  • In a separate small pan, fry an egg sunny-side up or scrambled (if desired), and serve on top of the fried rice.

7. Garnish and Serve:

  • Garnish with chopped green onions and sesame seeds.
  • Serve hot, topped with the egg if using.

Enjoy with:

  • Kimchi on the side
  • A drizzle of extra sesame oil for added flavor

This gochujang fried rice is spicy, savory, and full of umami flavor! Perfect for a quick weeknight meal.
