FUDGEY PEANUT BROWNIES! Yes, you read that right! Getting some brownie points over here with these VEGAN, FLOURLESS, insanely fudgey brownies which are everything you need to start off this new month & this weekend the right way. I’ve made these twice in the past week and each time I just can’t get over the fudge texture and the taste! Seriously the simplest brownie ingredients and probably all things you have on hand soooo what are you waiting for?
Fudgey Peanut Brownies:
1/3 cup dates
1/4 cup warm water
1/4 cup applesauce
1/2 cup peanut butter
1/4 cup sweet potato puree
1/3 cup cacao
1 tsp baking powder
1/4 cup chopped peanuts (more for topping)
Chocolate chips (optional but advised)
Preheat oven to 350. Combine all ingredients (except peanuts and chocolate chips) in a food processor and blend until combined. Mix in the peanuts and chocolate chips. Line a bread pan with parchment paper, add the brownie mix into the pan and bake for approximately 25-30 minutes. The brownie will be fudgey and gooey in the middle and will not “bake” through but they are vegan, so no need to worry! Enjoy!
