Egg Roll in a Bowl

Egg Roll in a Bowl is a deconstructed version of a classic egg roll, combining all the delicious flavors without the wrapper. It’s a quick, low-carb meal packed with savory ground meat, cabbage, and Asian-inspired seasonings.

Ingredients:

  • 1 lb (450g) ground pork, ground beef, or ground turkey
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 bag (14 oz) coleslaw mix (shredded cabbage and carrots)
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon Sriracha or chili garlic sauce (optional, for heat)
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Salt and pepper to taste

Instructions:

1. Cook the Ground Meat:

  • In a large skillet, cook the ground pork (or beef/turkey) over medium-high heat, breaking it apart as it cooks.
  • Once browned and cooked through, drain any excess fat if needed and season with salt and pepper. Set the meat aside.

2. Sauté the Aromatics:

  • In the same skillet, add the chopped onion, garlic, and fresh ginger.
  • Sauté for about 2-3 minutes until fragrant and the onion is soft.

3. Cook the Vegetables:

  • Add the coleslaw mix (shredded cabbage and carrots) to the skillet.
  • Stir and cook for about 5-6 minutes, until the cabbage softens but still retains a bit of crunch.

4. Season the Dish:

  • Return the cooked ground meat to the skillet.
  • Add the soy sauce, sesame oil, rice vinegar, and Sriracha (if using).
  • Stir everything together and cook for another 2-3 minutes to allow the flavors to blend.

5. Garnish and Serve:

  • Remove the skillet from heat and top with chopped green onions and sesame seeds.
  • Serve hot, either on its own or with steamed rice for a heartier meal.

This dish is a fantastic low-carb option that gives you all the satisfying flavors of an egg roll in a healthy and easy-to-make bowl!
