Ingredients:

  • 1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely diced
  • 1/2 red bell pepper, diced
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1/4 cup feta cheese (optional)
  • 1 avocado, diced (optional)

For the Lemon Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Prepare the dressing:
    In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper. Set aside.
  2. Assemble the salad:

  3. Add the dressing:
