Chickpea Salad Recipe
This easy and healthy chickpea salad is packed with fresh veggies, protein-rich chickpeas, and a zesty lemon dressing. It’s perfect as a light lunch, side dish, or a refreshing snack.
Ingredients:
- 1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely diced
- 1/2 red bell pepper, diced
- 1/4 cup fresh parsley or cilantro, chopped
- 1/4 cup feta cheese (optional)
- 1 avocado, diced (optional)
For the Lemon Dressing:
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
- Prepare the dressing:
In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper. Set aside. - Assemble the salad:
In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, red bell pepper, and fresh parsley (and feta and avocado if using). Gently toss the ingredients together. - Add the dressing:
