Ingredients:

  • 12 oz pasta (penne, fettuccine, or your choice)
  • 1 lb chicken breasts, sliced into thin strips
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 4 cups fresh spinach leaves
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken strips with salt and pepper, then add them to the skillet. Cook for 5-7 minutes until the chicken is fully cooked and golden brown. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and sauté the minced garlic for 30 seconds until fragrant.
