Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil

  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • ½ cup cooked black beans (optional)
  • ½ cup corn kernels (optional)
  • ½ red bell pepper, diced
  • ½ onion, thinly sliced
  • 1 tablespoon butter, for cooking
  • Salsa, guacamole, and sour cream (for serving)

Instructions:

  1. Prepare the chicken:
    • Season chicken breasts with olive oil, cumin, chili powder, garlic powder, paprika, salt, and pepper.
    • Heat a skillet over medium heat and cook the chicken for about 5-7 minutes per side, or until fully cooked.
    • Let the chicken rest for a few minutes, then shred or dice into bite-sized pieces.
  2. Cook the veggies:
    • In the same skillet, sauté the bell pepper and onion until softened, about 5 minutes.
  3. Assemble the quesadillas:
    • Lay a tortilla flat and sprinkle half of it with cheese. Add some shredded chicken, sautéed veggies, black beans, and corn (if using), then sprinkle more cheese on top.
    • Fold the tortilla in half to cover the fillings.
