  1. Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. Prepare the chicken:
    • Pound the chicken breasts to an even thickness using a mallet or rolling pin.
    • Season both sides of the chicken with salt and pepper.
  3. Bread the chicken:
    • Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, garlic powder, and oregano.
    • Coat each chicken breast in flour, then dip into the eggs, and finally coat thoroughly with the breadcrumb mixture.
  4. Sear the chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Cook the chicken breasts for 3-4 minutes on each side, until golden brown (they don’t need to be fully cooked through).
  5. Assemble:
    • Place the seared chicken in the greased baking dish.
    • Top each chicken breast with marinara sauce and sprinkle with mozzarella and Parmesan cheese.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the cheese is bubbly and golden brown.
  7. Serve:
