Chicken Parmesan

- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs (preferably Italian-style)
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 large eggs
- 1 cup all-purpose flour
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (for topping)
- 2 tbsp olive oil
- Fresh basil leaves (optional, for garnish)
Instructions:
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
- Prepare the chicken:
- Pound the chicken breasts to an even thickness using a mallet or rolling pin.
- Season both sides of the chicken with salt and pepper.
- Bread the chicken:
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, garlic powder, and oregano.
- Coat each chicken breast in flour, then dip into the eggs, and finally coat thoroughly with the breadcrumb mixture.
- Sear the chicken:
- Heat olive oil in a large skillet over medium-high heat.
- Cook the chicken breasts for 3-4 minutes on each side, until golden brown (they don’t need to be fully cooked through).
- Assemble:
- Place the seared chicken in the greased baking dish.
- Top each chicken breast with marinara sauce and sprinkle with mozzarella and Parmesan cheese.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the cheese is bubbly and golden brown.
- Serve:
- Garnish with fresh basil leaves if desired, and serve hot with pasta or a side salad.
