Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon Italian seasoning
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 8 oz (225g) fresh mozzarella, sliced
  • Fresh basil leaves
  • Balsamic glaze or balsamic vinegar reduction, for drizzling

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-8 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F / 74°C). Remove from heat.
  3. Top with Mozzarella and Tomatoes: Place mozzarella slices on top of each chicken breast, followed by a handful of cherry tomato halves. Cover the skillet with a lid and cook on low heat for 2-3 minutes, or until the mozzarella is melted and tomatoes are slightly softened.
