Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 1 lb beef (sirloin or flank steak), thinly sliced
  • 2 tbsp soy sauce (plus more for drizzling)
  • 2 tbsp vegetable oil (divided)
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Sesame oil (optional, for drizzling)

Instructions:

  1. Marinate the beef: In a bowl, combine the thinly sliced beef with 2 tbsp soy sauce, mixing well. Let it marinate for about 15-20 minutes.
  2. Heat the oil: In a large skillet or wok, heat 1 tbsp vegetable oil over medium-high heat. Add the marinated beef and cook for about 3-4 minutes until browned and cooked through. Remove the beef from the skillet and set aside.
  3. Sauté vegetables: In the same skillet, add the remaining 1 tbsp vegetable oil. Add the onion and cook for about 2-3 minutes until softened. Then add the garlic and cook for another minute until fragrant.
  4. Add mixed vegetables: Stir in the mixed vegetables and cook for about 3-4 minutes until heated through.
  5. Scramble the eggs: Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them with the vegetables.
  6. Combine everything: Add the cooked rice and the cooked beef back into the skillet. Drizzle with more soy sauce (to taste) and stir everything together, making sure the rice is heated through and well combined.
  7. Finish and serve: Add the green onions and season with salt and pepper to taste. Drizzle with sesame oil if desired.
