  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the beef:
    • Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 1 minute.
    • Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and fully cooked through, about 7-8 minutes. Drain any excess fat.
    • Stir in cumin, chili powder, paprika, oregano, salt, pepper, and diced green chilies (if using). Cook for another 2 minutes, then remove from heat.
  3. Assemble the enchiladas:
    • Spread about ¼ cup of enchilada sauce on the bottom of the prepared baking dish.
    • Warm the tortillas slightly in the microwave to make them more pliable. Spoon a portion of the beef mixture and some shredded cheese into the center of each tortilla. Roll them up tightly and place seam-side down in the baking dish.
  4. Top with sauce and cheese:
    • Pour the remaining enchilada sauce evenly over the rolled tortillas. Sprinkle the rest of the shredded cheese on top.
  5. Bake:
    • Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Garnish with chopped cilantro and serve with sour cream on the side.
