Bacon Jalapeño Popper Eggrolls Recipe
These crispy, creamy, and spicy eggrolls are a fun twist on classic jalapeño poppers, with a crispy shell packed with bacon, cheese, and jalapeños!
Ingredients:
- 12 eggroll wrappers
- 8 slices of bacon, cooked and crumbled
- 6 jalapeños, seeded and finely chopped
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 green onions, finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Vegetable oil (for frying)
Instructions:
- Prepare the filling:
In a large mixing bowl, combine softened cream cheese, cheddar cheese, mozzarella, cooked bacon, jalapeños, green onions, garlic powder, and onion powder. Mix until everything is well combined. - Assemble the eggrolls:
Lay an eggroll wrapper on a clean surface with one corner pointing toward you (like a diamond shape). Place about 2 tablespoons of the filling in the center. Fold the bottom corner up over the filling, then fold the sides in, and roll tightly. Use a bit of water to seal the edges. Repeat with remaining wrappers and filling. - Fry the eggrolls:
Heat about 2 inches of vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C). Fry the eggrolls in batches, 2-3 minutes per side, until golden brown and crispy. Remove and drain on paper towels. - Serve:
