Mushroom Pork Chops

Here’s a comforting and flavorful recipe for Mushroom Pork Chops:

Ingredients

  • 4 boneless or bone-in pork chops (about 1-inch thick)
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil or butter
  • 8 oz (225 g) fresh mushrooms, sliced (button or cremini work well)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream or sour cream
  • 1 tsp Dijon mustard (optional)
  • 1 tbsp all-purpose flour (for thickening, optional)
  • 1 tsp fresh thyme or 1/2 tsp dried thyme (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the pork chops:
    • Season both sides of the pork chops with salt, pepper, garlic powder, and onion powder.
  2. Sear the pork chops:
    • Heat olive oil or butter in a large skillet over medium-high heat.
    • Add the pork chops and sear for 3-4 minutes per side until golden brown. Remove from the skillet and set aside.
  3. Cook the mushrooms:
    • In the same skillet, add a bit more oil or butter if needed.
    • Sauté the mushrooms, onions, and garlic over medium heat until softened and lightly browned, about 5-6 minutes.
  4. Make the sauce:
    • Stir in the chicken broth and scrape the bottom of the skillet to deglaze.
    • If using flour, mix it with 2 tablespoons of water to create a slurry, then stir it into the sauce for thickening.
    • Add heavy cream (or sour cream), Dijon mustard, and thyme. Simmer for 2-3 minutes until the sauce thickens slightly.
  5. Combine:
    • Return the pork chops to the skillet, spooning the sauce over them.
    • Reduce the heat to low, cover, and simmer for 10-15 minutes, or until the pork chops are cooked through (internal temperature of 145°F/63°C).
  6. Serve:
    • Garnish with fresh parsley and serve the pork chops with the mushroom sauce over mashed potatoes, rice, or egg noodles.
