- 12 lasagna noodles
- 1 (15 oz) container ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cups fresh spinach, chopped (optional, for extra flavor and nutrition)
- Salt and black pepper, to taste
- 3 cups marinara sauce (store-bought or homemade)
- 1 tsp Italian seasoning

Instructions
- Cook the Noodles:
- Preheat your oven to 375°F (190°C).
- Cook lasagna noodles according to package directions until al dente. Drain and lay them flat on a baking sheet, lightly coated with oil, to prevent sticking.
- Prepare the Ricotta Filling:
- In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella, Parmesan, egg, chopped spinach (if using), Italian seasoning, salt, and pepper. Stir until smooth and well combined.
- Assemble the Roll Ups:
- Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
- Lay out each lasagna noodle and spread about 2-3 tablespoons of the ricotta filling evenly over each noodle.
