Ingredients

  • 12 lasagna noodles
  • 1 (15 oz) container ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach, chopped (optional, for extra flavor and nutrition)
  • Salt and black pepper, to taste
  • 3 cups marinara sauce (store-bought or homemade)
  • 1 tsp Italian seasoning
  • Fresh basil or parsley, chopped, for garnish (optional)

Instructions

  1. Cook the Noodles:
    • Preheat your oven to 375°F (190°C).
    • Cook lasagna noodles according to package directions until al dente. Drain and lay them flat on a baking sheet, lightly coated with oil, to prevent sticking.
  2. Prepare the Ricotta Filling:
    • In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella, Parmesan, egg, chopped spinach (if using), Italian seasoning, salt, and pepper. Stir until smooth and well combined.
  3. Assemble the Roll Ups:
    • Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
