Spinach Stuffed Chicken Breast

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 cup fresh spinach leaves, chopped
  • 1/2 cup ricotta or cream cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Prepare the Chicken: Preheat your oven to 375°F (190°C). Cut a slit into each chicken breast, creating a pocket but being careful not to cut all the way through.
  2. Season the Chicken: Rub the chicken breasts with olive oil, and sprinkle them with salt, pepper, garlic powder, onion powder, and paprika.
  3. Make the Filling: In a mixing bowl, combine the chopped spinach, ricotta or cream cheese, mozzarella, and Parmesan until well mixed.
