Caprese Pasta

Here’s a simple and delicious Caprese Pasta recipe for a quick and fresh meal:

Ingredients

  • 12 oz (340g) pasta (spaghetti, penne, or fusilli work great)
  • 1 pint (about 2 cups) cherry or grape tomatoes, halved
  • 8 oz (225g) fresh mozzarella balls (bocconcini or ciliegine), halved or diced
  • 1 cup fresh basil leaves, torn
  • 3 tbsp extra-virgin olive oil
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Balsamic glaze, for drizzling (optional)

Instructions

  1. Cook the Pasta: Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant. Be careful not to burn the garlic.
  3. Add Tomatoes: Toss in the halved cherry tomatoes, and cook for 2-3 minutes, just until they begin to soften and release their juices.
  4. Combine Pasta and Mozzarella: Add the cooked pasta to the skillet, mixing it with the tomatoes and garlic. Turn off the heat and add the mozzarella balls, stirring gently to incorporate.
  5. Add Basil and Season: Stir in the fresh basil leaves. Season with salt and pepper to taste.
  6. Serve: Transfer to a serving dish, drizzle with balsamic glaze if desired, and serve warm.

Tips

  • For Extra Flavor: Add a splash of white wine or lemon juice to the tomatoes for a slightly tangy twist.
  • To Make it Creamier: Add a tablespoon of pesto or a handful of grated Parmesan.

Enjoy your Caprese Pasta with a side of garlic bread or a fresh salad for a perfect Italian-inspired meal!
