Tuscan Mac and Cheese

Tuscan Mac and Cheese combines the creamy comfort of traditional mac and cheese with the rich, savory flavors of Tuscan cuisine. This recipe includes sun-dried tomatoes, garlic, spinach, and a blend of Italian cheeses to elevate a classic dish.

Ingredients:

  • 12 oz elbow macaroni or pasta of choice
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded fontina or Gruyère cheese
  • ½ cup sun-dried tomatoes (in oil), chopped
  • 2 cups fresh spinach, roughly chopped
  • ½ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil for garnish (optional)

Instructions:

1. Cook the Pasta:

  • Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.

2. Make the Creamy Sauce:

  • In a large skillet or saucepan, melt the butter over medium heat.
  • Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Whisk in the flour and cook for another 1-2 minutes to make a roux, stirring constantly.
  • Gradually whisk in the milk and heavy cream, stirring until the mixture thickens and becomes smooth.

3. Add the Cheese and Flavorings:

  • Reduce the heat to low. Stir in the Parmesan, mozzarella, and fontina cheeses, a handful at a time, allowing each addition to melt before adding more.
  • Once the sauce is smooth and cheesy, stir in the Italian seasoning, sun-dried tomatoes, spinach, and salt and pepper to taste.
  • Allow the spinach to wilt in the sauce (about 2-3 minutes).

4. Combine Pasta and Sauce:

  • Add the cooked pasta to the sauce and stir until the pasta is fully coated in the cheesy, creamy goodness.
  • Adjust seasoning with additional salt and pepper if needed.

5. Optional Baking Step:

  • If you like a baked, crispy top, transfer the mac and cheese to a greased baking dish, top with extra mozzarella or Parmesan, and bake at 375°F (190°C) for 15 minutes until the top is golden and bubbly.

6. Serve:

  • Garnish with fresh basil and serve hot.

This Tuscan twist on mac and cheese is packed with savory flavors and creamy textures, making it a great comfort food or family meal.
