Here’s a rich and flavorful recipe for French Onion Pasta that combines the deliciousness of French onion soup with the comfort of pasta!
Ingredients:
- 12 oz pasta (fettuccine, linguine, or your favorite)
- 3 large onions, thinly sliced
- 3 tbsp butter
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp sugar
- 1/4 cup white wine (optional)
- 2 cups beef broth (or vegetable broth for a vegetarian option)
- 1 tsp thyme (fresh or dried)
- 1 cup Gruyère cheese, shredded (or mozzarella for a milder flavor)
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Cook the pasta according to package instructions. Reserve about 1/2 cup of pasta water before draining. Set aside.
- In a large skillet or pot, melt the butter with olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 25-30 minutes, until the onions are golden brown and caramelized. Lower the heat if necessary to prevent burning.
- Add the sugar and garlic, and cook for another 2-3 minutes. If you’re using white wine, pour it in now to deglaze the pan, stirring to scrape up any browned bits. Let it simmer until most of the wine evaporates, about 2 minutes.
- Add the beef broth and thyme to the onions. Bring to a simmer and let it reduce slightly for about 5-7 minutes, allowing the flavors to intensify. Season with salt and pepper to taste.
- Stir in the Gruyère cheese until melted and creamy. Then add the drained pasta and toss everything together, using some of the reserved pasta water if needed to loosen the sauce.
- Serve the pasta topped with Parmesan cheese and garnish with fresh parsley.
This French Onion Pasta is a perfect blend of sweet caramelized onions, savory broth, and cheesy goodness.
