Hearty Pork Stew Recipe

Ingredients:

  • 1.5 lbs pork shoulder, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 medium carrots, peeled and chopped
  • 3 medium potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • 1 cup diced tomatoes (canned or fresh)
  • 4 cups chicken or vegetable broth
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.
  2. Season the pork cubes with salt and pepper, then add them to the pot. Brown the pork on all sides (about 5-6 minutes). Remove the pork and set aside.
  3. In the same pot, add the remaining tablespoon of olive oil and sauté the onions, carrots, celery, and garlic until the onions are softened (about 3-4 minutes).
  4. Stir in the tomato paste, paprika, and thyme and cook for another minute.
  5. Return the pork to the pot along with the diced tomatoes, potatoes, Worcestershire sauce, bay leaves, and broth.
  6. Bring to a boil, then reduce the heat to low, cover, and let the stew simmer for 1.5 to 2 hours, until the pork is tender and the vegetables are cooked through.
  7. Taste and adjust seasoning with salt and pepper, if needed.
  8. Remove the bay leaves before serving. Garnish with fresh parsley if desired.
