Ganitong Pansit

Here’s a simple and delicious Pansit Guisado recipe, a traditional Filipino noodle dish that’s perfect for any occasion!

Ingredients:

  • 200g pancit bihon (rice noodles)
  • 200g pancit canton (egg noodles)
  • 2 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 1 medium onion, sliced
  • 1/4 cup soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tsp pepper
  • 1 1/2 cups chicken broth or water
  • 200g chicken breast or pork, sliced thinly
  • 100g shrimp (optional)
  • 1 large carrot, julienned
  • 1 small cabbage, sliced thinly
  • 1/2 cup green beans, sliced
  • 1/2 cup snow peas (optional)
  • 1/4 cup celery, sliced (optional)
  • Salt and pepper to taste
  • Lemon or calamansi for serving

Instructions:

  1. Prepare the Noodles:
  • Soak the bihon (rice noodles) in warm water for about 10-15 minutes until softened, then drain and set aside.
  • Boil the pancit canton (egg noodles) according to the package instructions. Drain and set aside.
  1. Sauté the Aromatics:
  • Heat the oil in a large pan or wok over medium heat.
  • Add the minced garlic and sauté until fragrant, then add the onions and cook until softened.
  1. Cook the Meat:
  • Add the sliced chicken (or pork) and shrimp (if using) to the pan. Cook until the chicken is browned and fully cooked through.
  • Season with a pinch of salt and pepper.
  1. Add Vegetables:
  • Stir in the carrots, green beans, cabbage, snow peas, and celery. Cook for 2-3 minutes until the vegetables are tender-crisp.
  1. Add Broth and Noodles:
  • Pour in the chicken broth or water, then add the soy sauce, oyster sauce, and pepper. Bring to a simmer.
  • Add the softened bihon and cooked pancit canton to the pan. Toss everything together gently, ensuring the noodles are well coated with the sauce and vegetables are evenly distributed.
  1. Cook and Serve:
  • Let everything cook together for another 2-3 minutes until the noodles absorb the sauce and everything is heated through.
  • Adjust seasoning with salt, pepper, or additional soy sauce if needed.
  1. Serve:
  • Serve hot with a wedge of lemon or calamansi on the side for that zesty kick!
